Green Smoothies & Breakfast Burritos

I think I technically was going to cover this LAST week but real life got in the way.  I will admit that more and more I am feeling that this blog actually gets in the way of real life, but I am keeping on for now.

1.  DIY Frozen Breakfast Burritos

During the work week, I eat my breakfast at my office.  99% of the time, I am making some oatmeal.  I started to get tired of oatmeal, no matter how many concoctions I was getting good at making with it.  So I gave the frozen breakfast burritos a try.  One night I scrambled a bunch of eggs, divided them among several flour tortillas, added some black beans and salsa to each, wrapped them and put them in a big ziploc bag. 

It has been a nice change of pace since oatmeal.  I also have been having them as a mid-morning snack.  Unfortunately I ate my last one yesterday so back to the stove top.

2.  Green Smoothies

My daughter loves anything that is called a smoothie.   While she used to be great about eating greens, she has lately gone on a greens strike.  I swore I would NEVER do this (famous last words) but I have succumbed to the hiding of the greens.  I have been making green smoothies for her after swim lessons as a "treat".  That girl will suck down 1/2 - 3/4 of a blender full of smoothie.  For real.

I haven't really followed any recipe - although here is an example of a big list.  I basically have been throwing stuff in a blender, trial and error.  Our favorite combo is coconut greek yogurt + greens (kale or spinach) + pineapple + banana and a splash of milk.

  1. i eat my boring english muffin with peanut butter and a side of cottage cheese every morning, except for weekends. I need to try the smoothies!
